1/2 cup butter or margarine, softened (I used oil)
1/2 cup granulated sugar (I used brown sugar)
1 teaspoon almond extract
1 1/2 cups flour
2 tsp baking powder
milk according to need
3 medium baking apples, peeled, cut into small pieces
1 teaspoon powdered sugar
1/4 cup sliced almonds, toasted if desired
1 Heat oven to 325°F. Spray bottom of 9-inch springform pan with cooking spray.
2 In large bowl, beat butter and granulated sugar with electric mixer on high speed 1 minute. Add eggs and almond extract; beat on medium speed about 10 seconds. Add flour mixed with baking powder; beat on medium speed about 30 seconds or until combined.Add milk watching the consistency of the batter 1/4 cup or may be lesser.
3 Spread batter in bottom of pan. Press apple pieces, cut sides down, into batter. Bake 40 to 50 minutes or until apples are tender and cake is golden brown.
4 Cool 30 minutes at room temperature. Remove side of pan. Sift or sprinkle powdered sugar over top of cake; sprinkle with almonds. Serve warm.
