The mug is an Xmas gift from my son and so is the fav Rum ‘n’ Raisins chocolate… A must from him on every occasion 😊
Maida 1 & 3/4 cup
Olive oil 1/4 cup
Fine Sugar 1/2 cup
Baking powder 1 tsp
Vanilla essence 1 1/2 tsp
Almond essence 1/2 tsp or 2 tbsp dark rum
Salt 1/4 tsp
Whole pistachios 3/4 cup
Cranberries 3/4 cup
Preheat oven to 160C
Line a cookie tray with parchment paper
Mix the sugar and oil well with an electric beater.
Add the flavours and egg and beat for another minute.
Sift the flour, salt and bp together.
Add this to the egg mix slowly and mix well with a wooden spoon.
Fold in the nuts and fruit, mix well.
Divide into two and shape each half into a loaf. Pat down and bake for 35-40 mins.
Let cool for 10-15 mins on a wire rack.
Lay out on the tray again. Bake for 10-15 mins or till try.
Cool and store.
