Eggless wheat cake

1 cup whole wheat flour
1/2 cup brown sugar (you can use regular white sugar)
2 1/2 tbsp olive oil
1/4 cup low-fat plain yogurt
1/4 tsp cinnamon powder
1/2 tsp baking soda
1 tsp baking powder
Some salt
3 tbsp low fat milk
1/4 cup walnuts (cut into small pieces)

– Preheat oven to 180C
– Sift together whole wheat flour, baking powder, baking soda, cinnamon powder & salt at least 3 times
– Add little of the flour mixture to the walnuts so that they are coated with the flour
– Combine sugar, oil in a bowl and then add yogurt to this mixture. Blend well
– Add sifted flour in 2 batches to the sugar+oil+yogurt mixture and fold well with a spatula
– Add milk and blend again till you get a good cake batter consistency
– Grease cake tin with oil and dust some whole wheat flour
– Put the batter in the tin and bake for around 30-35 mins or until a toothpick inserted comes out clean
– Remove from oven and cool in the tin for some time
– Remove the cake from the cake tin and allow it to cool.
