Freshly ground whole wheat flour. 3 cups
Vital gluten. 2 tbl sp
Instant yeast. 2 1/4 tsp
Sugar. 2 tbl sp
Salt 1 tsp
Oil or butter. 1/4 cup
Proof the yeast in 1/4 cup of warm water and 2 tbsp of sugar. It takes 10 min to proof.
Mix the flour and salt and make a well in the corner.
Add oil and the formy yeast mixture.
Start mixing adding the rest of the liquid. Kneed your dough using the heel of your palm. Sprinkle water and knead the dough for 10 to 15 min to make it a soft and sticky dough.
Now place the dough in oiled bowl covered with plastic cover and allow to prove for aboubt 45 min to 1 hr or till double.
Remove the dough and knead for 2 min
Dust with rawa in oiled loaf pan. Place the dough in that and cover it again with plastic wrap and allow to prove second time for another half an hr.
Preheat oven to 200 Celsius.
Brush dough with milk for softer crust.
Bake it for about 40 min until the crust is golden.
Cool in wire rack before slicing.
