Carrot Cake

1 1/2 wheat Flour

3/4 cup Oil

2 Cups grated carrots

1 cup sugar/brown sugar

2 cups dates chopped

1 cup walnuts

4 eggs

Spices: 6 small cardamom

2 cloves

pinch of nutmeg

1/2 tsp baking powder

1/2 baking soda ( genreally people dont like the flavour of soda in that case you can increase the baking powder to 1 tsp)

2 big tsp rum or brandy

Take a bowl put grated carrots, dates, sugar , oil & spices. Mix rum and let it rest for 1/2 hr. Beat Eggs and fold in wheat (aata) , nuts and mix again in the end mix the carrot mix fold it with hand. pour in  a greased baking dish and bake it on 200- 250 degrees. Enjoy this healthy Christmas speciality. If you want to make it more formal you can cut the cake in layers and use your favourite icing ont he layers layers. i used the basic whipped cream and vanilla icing. It tastes heavenly! Its a perfect cake for tea or a formal desert. Enjoy!!  Post your carrot cake pictures.

P.S : If you do not like the taste of the spices used you can replace them with 1/2 tsp cinnamon powder.
